Paxton Sullivan serves as the Technical Services Manager at Sustainable Beef in North Platte, NE, a greenfield beef processing facility that began operations in May 2025 as a collaborative partnership connecting ranchers, feeders, processors, and retailers across the supply chain. In her role, she oversees plant-level and corporate food safety, quality, and regulatory programs, along with customer relations, animal welfare, and research and development.
Paxton is a proud alumna of Colorado State University, where she earned both her Bachelor’s and Master’s degrees in Animal Science. Her graduate work focused on animal welfare at the end of the supply chain, with an emphasis on identifying practical, meaningful improvements that enhance outcomes where they matter most.
Since joining Sustainable Beef in January 2025, Paxton has played a key role in advancing integrated approaches to animal care, beef safety and quality, and supply chain collaboration.
