This session opens with a personal story from Christopher George, a 22-year firefighter and father from Indiana, whose son nearly died after contracting E. coli during a 2024 romaine lettuce outbreak. As a constituent of STOP (Stop Foodborne Illness), Christopher will share how the experience changed his family’s life.  

 Brian Eyink (Hogan Lovells) and Dr. Sanjay Gummalla (AFFI) will explore key lessons from food safety outbreaks across industries and how these insights can strengthen safety practices in the meat sector. Attendees will gain practical knowledge on risk mitigation, crisis response, and prevention strategies that can be adapted to enhance food safety in meat processing.
