Dan Schmitz is the Director of Operations for Commercial Food Sanitation LLC, where he leads the company’s consulting business. Commercial Food Sanitation (CFS) is a global company that addresses food safety, hygienic design and sanitation challenges through strategic consulting and training. CFS specializes in sanitation, hygienic design, pathogen control, allergen management, good manufacturing practices (GMPs), cleaning effectiveness, and efficiency in the food industry.

Prior to CFS, Dan had a 20-year career with Kraft Foods that focused in the Oscar Mayer Division. During that time Dan has held plant leadership roles in operations, quality, and sanitation in some of the largest and most demanding plant environments. With over 25 years of experience in the food manufacturing industry, Dan has expertise in all levels of process meat manufacturing, from turkey slaughter to ready-to-eat finished product production. Dan’s program knowledge includes HACCP, pathogen environmental monitoring, hygienic design, allergen controls, all aspects of sanitation, Six Sigma, GFSI, and much more.

Dan also completed a 24-year long career in the United States Air Force. Now retired, LTC Schmitz was a Master Navigator and the 95th Airlift Squadron Chief Navigator. LTC Schmitz has flown over 7000 hours in the B-52 and C-130 aircraft, including 237 combat sorties.
