Brian Covington is the Vice President of Food Safety, Quality Systems, and Product Innovation at Lopez Dorada. In this role, he is responsible for overseeing all food safety and quality programs, as well as managing the product innovation team across the Lopez Dorada facilities.

Prior to joining Lopez Dorada, Brian held a similar position at Keystone Foods. He has made significant contributions to the industry through his leadership roles, including two terms on the National Advisory Committee for Meat and Poultry Inspection. Brian is a former Chairman of the Southwest Meat Association Board and served as Treasurer for SSAFE, a global non-profit organization. He has also co-chaired the Inspection Policy Committee for The Meat Institute and served as both Chairman and Executive Committee member of the Beef Industry Food Safety Council (BIFSCo).

Brian holds an undergraduate degree from Texas A&M University, as well as Master's degrees in Ruminant Nutrition and Meat Science from Texas A&M.
